Winter Break Camp: On the Pulse of Fun

Children enrolled in the Holiday Winter Camp had the chance to be on the pulse of some culinary fun. One of the week’s activities included baking up cookies with a very special ingredient, lentils.
Lentils which are a type of pulse (a term used to describe the edible seeds of legumes) that are loaded with nutritional benefits. They are a lean source of protein and are rich in iron, fiber, potassium and folate. Lentils are not only healthy but versatile, as was demonstrated (albeit not so obviously) to our students when they were used as an ingredient in chocolate chip cookies.
The children not only enjoyed baking the cookies but gobbling them up fresh out of the oven as their afternoon snack.
We’re sharing the recipe if you’d like to try and make them at home and of course we leave disclosure of the secret ingredient to your discretion.

Chocolate Chip Lentil Cookies Recipe
Ingredients:
• ½ cup butter, softened
• 2 cups brown sugar, packed
• 1 egg
• 2 tsp vanilla
• ½ cup lentil puree
• 2 cups all-purpose flour
• ½ tsp salt
• 2 tsp baking powder
• 2 cups chocolate chips

Prep and Cook:
1. Preheat your oven to 375 degrees.
2. Use a stand mixer or food processor to cream together the butter and sugar (until smooth)
3. Add the egg, vanilla and lentil purée and continue until the mixture is smooth again.
4. In a separate bowl, whisk the flour, baking powder and salt.
5. Add the dry ingredients to the wet ingredients and mix well. Stir in the chocolate chips.
6. Roll into balls or drop by the spoonful, placing about 2″ apart on a lightly oiled baking tray.
5. Bake for exactly 12 minutes. Cool before serving and enjoy!
